Ingredients

  • 4 bone-in pork chops, about 1 inch thick
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 2 cups fresh peaches, sliced
  • 1/2 cup peach preserves
  • 1/4 cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Season pork chops on both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add pork chops and sear for 3–4 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, add garlic and sauté for 30 seconds.
  5. Stir in peaches, peach preserves, chicken broth, and apple cider vinegar.
  6. Bring to a simmer and cook until peaches soften, about 5 minutes.
  7. Return pork chops to the skillet, spoon sauce over the top, and cook for another 5–7 minutes until pork reaches 145°F.
  8. Sprinkle with fresh thyme before serving.
