Heat olive oil in a large skillet over medium heat.
Add diced chicken and cook until browned and fully cooked through, about 5-7 minutes.
Add onion, garlic, and bell peppers. Sauté for another 3-4 minutes until softened.
Stir in pineapple chunks, soy sauce, honey, ginger, and red pepper flakes. Cook for another 2-3 minutes until heated through.
Season with salt and pepper to taste.
Serve over cooked rice, garnished with sesame seeds and sliced green onions.
