Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup cooked rice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp sesame seeds (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and fully cooked through, about 5-7 minutes.
  3. Add onion, garlic, and bell peppers. Sauté for another 3-4 minutes until softened.
  4. Stir in pineapple chunks, soy sauce, honey, ginger, and red pepper flakes. Cook for another 2-3 minutes until heated through.
  5. Season with salt and pepper to taste.
  6. Serve over cooked rice, garnished with sesame seeds and sliced green onions.
