Season pork chops with black pepper and garlic powder.
In a skillet over medium-high heat, heat olive oil and sear the pork chops until browned on both sides.
Place sliced onions at the bottom of the crock pot.
Arrange pork chops over the onions.
In a bowl, mix cream of mushroom soup, onion soup mix, and chicken broth. Pour over the pork chops.
Cover and cook on low for 6–7 hours or on high for 3–4 hours until pork is tender.
Serve pork chops topped with the onion gravy and garnish with parsley if desired.
