Add sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they start to soften.
Push sweet potatoes to the side and add ground beef to the skillet. Cook until browned, breaking it apart as it cooks.
Add diced onion, garlic, and bell pepper. Stir and cook for another 4-5 minutes until vegetables are tender.
Season with smoked paprika, cumin, chili powder, salt, and pepper. Stir to combine.
Cook for another 2-3 minutes, letting the flavors mingle.
Serve hot, garnished with fresh parsley.
