Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they start to soften.
  3. Push sweet potatoes to the side and add ground beef to the skillet. Cook until browned, breaking it apart as it cooks.
  4. Add diced onion, garlic, and bell pepper. Stir and cook for another 4-5 minutes until vegetables are tender.
  5. Season with smoked paprika, cumin, chili powder, salt, and pepper. Stir to combine.
  6. Cook for another 2-3 minutes, letting the flavors mingle.
  7. Serve hot, garnished with fresh parsley.
