Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tbsp red food coloring
  • 2 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 3/4 cup all-purpose flour
  • For the cream cheese swirl:
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter and 1 cup sugar. Stir in eggs, red food coloring, and 2 tsp vanilla.
  3. Sift in the cocoa powder, salt, and flour. Stir until just combined.
  4. Pour the batter into the prepared pan and smooth the top.
  5. In a separate bowl, mix cream cheese, 1/4 cup sugar, egg yolk, and 1/2 tsp vanilla until smooth.
  6. Drop spoonfuls of the cream cheese mixture on top of the brownie batter. Swirl gently with a knife.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool completely before slicing. If you can wait that long!
