  • 4 boneless, skinless chicken breasts

  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 4 slices mozzarella cheese
  • 1 cup fresh spinach
  • 1/2 cup roasted red peppers, sliced
  • 2 tablespoons olive oil
  • Toothpicks (to secure)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Using a sharp knife, carefully slice a pocket into each chicken breast without cutting all the way through.
  3. Season the chicken with salt, pepper, garlic powder, and Italian seasoning—both inside and out.
  4. Stuff each chicken breast with spinach, roasted red pepper slices, and a slice of mozzarella cheese.
  5. Secure the opening with toothpicks to keep the filling from spilling out.
