Slow Cooker Buffalo Chicken That’s Perfect for Easy Slow Cooker Recipes

Let’s face it—some nights you just don’t want to cook. I’ve been there, staring blankly at the fridge, hoping dinner magically appears. That’s when this slow cooker buffalo chicken comes to the rescue. It’s the kind of meal that lets you do everything else—like catch up on laundry or scroll through old vacation pics—while it practically makes itself. What makes this dish a winner? It checks all the boxes: it’s flavorful, requires minimal effort, and fits right into your weekly meal prep plans. Plus, it’s healthier than takeout but just as satisfying. The sauce has that zippy kick you want in buffalo anything, but it’s not so spicy that you need to chug milk between bites. This recipe is everything I love in easy slow cooker recipes. It’s great for busy weekdays, weekend meal prep, or those times when you want something cozy without hovering over the stove. So go ahead—toss it all in the slow cooker and let it do the heavy lifting.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1/4 cup low-sodium chicken broth
  • 1 tablespoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Place the chicken breasts in the bottom of a slow cooker.
  2. In a bowl, mix hot sauce, chicken broth, garlic powder, onion powder, and pepper. Pour over the chicken.
  3. Cover and cook on high for 3-4 hours or low for 6-7 hours, until chicken is tender.
  4. Shred the chicken in the slow cooker using two forks.
  5. If you'd like a thicker sauce, whisk together cornstarch and water in a small bowl, stir it into the chicken, and cook for another 20-30 minutes on high.
  6. Serve on buns, in wraps, over salads, or with rice—your call!
