Ingredients

  • 1 pound flank steak or skirt steak

  • 1 cup cooked white rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 avocado, sliced (optional)
  • 4 large flour tortillas

Instructions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Season the steak with salt, pepper, and garlic powder.
  3. Sear the steak for 3-4 minutes per side, or until your preferred doneness.
  4. Let the steak rest for 5 minutes, then slice it thinly against the grain.
  5. Warm the tortillas in a dry skillet or microwave.
  6. Layer each tortilla with rice, beans, sliced steak, cheese, sour cream, salsa, and avocado if using.
  7. Fold in the sides, roll tightly, and serve warm. Wrap in foil if you're saving them for later!
