  • 1 teaspoon paprika

  • 2 cups cooked rice
  • 1 cup corn kernels (grilled or canned)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 teaspoon chili powder
  • 1 tablespoon lime juice
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon smoked paprika
  • Lime wedges for serving

Instructions

  1. Preheat a grill or stovetop pan over medium-high heat.
  2. Season the chicken breasts with chili powder, garlic powder, paprika, salt, and pepper.
  3. Drizzle olive oil over the chicken and grill for 5-7 minutes per side, until fully cooked.
  4. Let the chicken rest for a few minutes, then slice into strips.
  5. In a bowl, mix corn kernels, mayonnaise, sour cream, chili powder, lime juice, cotija cheese, and cilantro.
  6. Divide the cooked rice into serving bowls.
  7. Top with sliced chicken and the street corn mixture.
