Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tsp ground cinnamon (for coating)
  • 2 tbsp unsalted butter, melted (for brushing)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, egg, melted butter, and vanilla.
  4. Combine the wet and dry ingredients until just mixed—don't over-stir.
  5. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 12–15 minutes or until golden and a toothpick comes out clean.
  7. While baking, mix the cinnamon and sugar for coating in a small bowl.
  8. Let the bites cool slightly, then brush with melted butter and roll in the cinnamon sugar.
