Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp cooking oil
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 1 tbsp sake (optional)
  • 1 tbsp cornstarch (optional, for thickening)
  • 1 tbsp water (for mixing with cornstarch)
  • Sesame seeds (for garnish)
  • Chopped green onions (for garnish)

Instructions

  1. In a bowl, mix soy sauce, mirin, sugar, and sake (if using). Set aside.
  2. Heat oil in a pan over medium heat. Add chicken and cook until browned on all sides.
  3. Pour in the sauce mixture and bring to a simmer.
  4. Cook for 5–7 minutes until the sauce reduces slightly.
  5. Optional: To thicken the sauce, mix cornstarch and water in a small bowl, then stir into the pan and cook until thickened.
  6. Garnish with sesame seeds and chopped green onions before serving.
  7. Serve hot over rice or noodles.
