Heat olive oil in a pan over medium heat.
Add diced chicken and cook until browned.
Stir in garlic and ginger, cooking for another minute.
Add bell peppers and pineapple chunks, stirring well.
Pour in soy sauce, honey, and red pepper flakes, and cook for another 5 minutes.
Season with salt and pepper to taste.
Serve over cooked white rice and garnish with green onions.
