Heat olive oil in a large skillet over medium heat.
Add the ground turkey and cook until browned, breaking it up with a spoon.
Stir in the chopped onion and garlic. Cook for 2–3 minutes until softened.
Add sweet potatoes, bell peppers, paprika, cumin, chili powder, salt, and pepper.
Pour in the water, cover, and reduce heat. Let cook for 10–12 minutes, stirring occasionally, until sweet potatoes are tender.
Uncover and cook an additional 2–3 minutes to let any excess liquid evaporate.
Garnish with fresh parsley and serve hot.
