Ingredients

  • 1 lb lean ground beef
  • 1 cup white rice, cooked
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded cheddar cheese
  • Fresh parsley (optional, for garnish)

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Drain any excess fat.
  2. Add chopped onion and bell peppers to the skillet. Sauté until softened, about 5 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Add the diced tomatoes (with their juice), cooked rice, Italian seasoning, salt, and pepper. Stir everything together.
